Meatballs & Mash (health program approved!)

I made up this recipe the other night and thought it was good enough to share!

This recipe is health program approved too!




*You will need a blender for the cauliflower "mash" (puree).

Ingredients:
  • 20 oz. ground turkey (>94% lean)
  • 1/4 cup Egg Beaters or egg whites
  • 1/4 cup Italian seasoning
  • 1 Tbsp. ginger (I know that sounds strange, but it is really good!)
  • 1 Tbsp. garlic salt
  • 1.5 cups of cauliflower is all three green servings (e.g. 3 cups for two people; 6 cups for four people)
  • 2 Tbsp. parmesan per 1.5 cups of cauliflower (e.g. 4 Tbsp. for two people; 8 Tbsp. for four people)
  • Au jus mix

Meatballs:
  1. Preheat oven to 425 degrees.
  2. Mix turkey, egg whites, Italian seasoning, ginger, and garlic salt in a mixing bowl.
  3. Cover cookie sheet with foil and spray with cooking spray.
  4. Make 20 equal meatballs (each ball is about 2 Tbsp. or 1/8 cup) and place them on the cookie sheet with space between each meatball. 
    (*TIP: Making every ball the same size will ensure even cooking.)
  5. Bake the meatballs at 425 degrees for 20 minutes.
  6. 7 meatballs is one lean protein serving on the health program I coach.
Cauliflower puree ("Mash"):
  1. Steam cauliflower until it is slightly over-cooked and very soft.
  2. Pour cauliflower into blender and add parmesan cheese.
  3. Blend to puree (do not overblend or it will become liquidy).
  4. 1/4 cup of cauliflower puree is 1 green vegetable serving for the health program I coach.  If it is your only vegetable, you should have 3/4 cup.
Au jus:
  1. Make per the package instructions.
  2. 1/4 cup is one condiment on the health program I coach.
