Turkey Taco Soup in the Slow Cooker (Health Program approved!)


It's soup season!  This is a great soup recipe because everything is cooked when you put it into the slow cooker, so you don't have to worry about low food temperatures.  The kids really love it too!




INSTRUCTIONS:
  1. Brown the ground turkey and drain it
  2. Combine all ingredients (except cheese) in slow cooker and cook on low for 8 hours or on high for 3-4 hours
  3. Dish-up and sprinkle cheese on top (divide cheese into five portions, one portion per serving on my health program)
Health Program ingredients:
  • 21 oz.95 to 97% Lean Ground Turkey or shredded chicken– 3 leaner proteins
  • 8 oz. reduced fat cheese - 2 lean proteins
  • 28 ounce cans diced tomatoes– 4 vegetables
  • 2 cups of other veggies (celery, cucumbers, white or portabella mushrooms, jalapeno, bok choy, spinach, watercress, cauliflower, eggplant, fennel bulb, kale, mushrooms, summer squash, broccoli, red cabbage, collard or mustard greens, green or wax beans, kohlrabi, okra, peppers, scallions, summer squash (scallop, zucchini, crookneck or straightneck), red tomatoes, spaghetti squash, hearts of palm, jicama)
  • 4 teaspoons ranch dressing - 8 condiments
  • 3 ½ teaspoons taco seasoning (see spice list below) – 7 condiments
  • 2 cups water
  • Health program servings:
This recipe makes five servings. One serving counts as follows:
  • 1 leaner protein
  • 1.5 vegetable servings
  • 3 condiments
Healthy Soup ingredients:
  • 20 oz. Ground Turkey
  • 9 oz. reduced fat cheese (or 6 oz. regular cheese)
  • 8 oz. frozen corn
  • 2 cans black beans
  • 1 can diced tomatoes
  • 2 cans Rotel tomatoes
  • 1 pkg. ranch dressing
  • 1/4 cup taco seasoning (see spice list below)
  • 2 cups water
 
Taco seasoning:
(don't use pre-packaged seasoning from the store -- it has flour in it):
Mix together the following:
  • 1 Tbsp. chili powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. paprika
  • 1 1/2 tsp. ground cumin
  • 1 tsp. sea salt
  • Black pepper to taste
(*TIP: Make several portions ahead of time to reduce prep time. Use about 1/4 cup seasoning per 20 oz. of turkey)
